Tomato Medley, Mushroom and Pesto Wrap

Enjoy a light and nutritious lunch using Helga's 60% Lower Carb Wraps.

Ingredients

  • 4 x Helga’s 60% Lower Carb Traditional Wholemeal wraps, grilled 

  • 1 punnet mixed tomato medley, halved 

  • 2 flat field mushrooms (120g), sliced then grilled 

  • 1 zucchini, sliced into ribbons 

  • 1/2 cup basil leaves 

  • 1/4 cup black olives, pitted 

  • 8 tbsp pesto 

  • Pepper and salt to taste  

Method

  1. Grill the wraps for 2 minutes to warm through and then set aside 
  2. Grill the mushrooms and zucchini for 3 minutes each side or until just cooked through, then set aside 
  3. Divide all the fillings into four  
  4. Preparing one wrap at a time add 1/4 of the fillings to each 
  5. Top with pesto and season with salt and pepper sparingly 
  6. Fold up the bottom and then roll the wrap  
  7. Serve immediately
