Tomato Medley, Mushroom and Pesto Wrap

Enjoy a light and nutritious lunch using Helga's 60% Lower Carb Wraps.
Ingredients
- 4 x Helga’s Traditional Wholemeal wraps, grilled
- 1 punnet mixed tomato medley, halved
- 2 flat field mushrooms (120g), sliced then grilled
- 1 zucchini, sliced into ribbons
- 1/2 cup basil leaves
- 1/4 cup black olives, pitted
- 8 tbsp pesto
- Pepper and salt to taste
Method
- Grill the wraps for 2 minutes to warm through and then set aside
- Grill the mushrooms and zucchini for 3 minutes each side or until just cooked through, then set aside
- Divide all the fillings into four
- Preparing one wrap at a time add 1/4 of the fillings to each
- Top with pesto and season with salt and pepper sparingly
- Fold up the bottom and then roll the wrap
- Serve immediately
