Smashed Avo & Poached Eggs on Sourdough

Smashed avo and sourdough is a match made in heaven, just ask any millennial...

Make this cafe classic at home with Helga's Sourdough and some runny poached eggs.


  • Helga's Sourdough
  • Eggs
  • Avocado
  • Basil
  • Cherry tomatoes
  • Chilli, salt and pepper, lemon juice for seasoning


  1. Slice Helga's Sourdough to your preferred thickness.
  2. Toast your sliced bread.
  3. Slice your avocado and place on the toast. Then use a fork to gently mash the avocado.
  4. Boil water in a pot on the stove.
  5. Sift the runny part of the egg whites from the rest of the egg.
  6. Place the remaining egg white and yolk in the boiling water for 2 minutes.
  7. Remove poached egg from the pot and allow the water to drain.
  8. Place the egg on top of the smashed avo.
  9. Add cherry tomatoes (grill if preferred).
  10. Season with chilli, salt, pepper and lemon juice.
