Smashed Avo & Poached Eggs on Sourdough

Make this cafe classic at home with Helga's Sourdough and some runny poached eggs.
Ingredients
- Helga's Sourdough
- Eggs
- Avocado
- Basil
- Cherry tomatoes
- Chilli, salt and pepper, lemon juice for seasoning
Method
- Slice Helga's Sourdough to your preferred thickness.
- Toast your sliced bread.
- Slice your avocado and place on the toast. Then use a fork to gently mash the avocado.
- Boil water in a pot on the stove.
- Sift the runny part of the egg whites from the rest of the egg.
- Place the remaining egg white and yolk in the boiling water for 2 minutes.
- Remove poached egg from the pot and allow the water to drain.
- Place the egg on top of the smashed avo.
- Add cherry tomatoes (grill if preferred).
- Season with chilli, salt, pepper and lemon juice.
