Ham, Goats Cheese & Beetroot Toasties Image

So simple, and so delicious. Not a fan of beetroot? Try swapping for caramelised onion!


  • 8 slices Helga’s Lower Carb 5 Seed Bread
  • 40g butter, softened
  • 100g soft goat’s cheese
  • 1/2 cup (160g) beetroot chutney
  • 100g sliced lean leg ham
  • 60g baby rocket leaves


  1. Lay a sheet of baking paper on a chopping board; top with bread slices. Spread slices with butter. Turn 4 slices so buttered side faces down; spread with cheese. Top with chutney, ham and rocket. Sandwich with remaining bread slices, buttered-side up.
  2. Preheat a sandwich press. Toast sandwiches, in batches, in hot sandwich press for 2 minutes or until golden and crisp.

Swap: Use fetta instead of goat’s cheese and caramelised onion instead of beetroot chutney.
