Ham, Goat’s Cheese & Beetroot Toasties
So simple, and so delicious. Not a fan of beetroot? Try swapping for caramelised onion!
- 8 slices Helga’s Lower Carb 5 Seed Bread
- 40g butter, softened
- 100g soft goat’s cheese
- 1/2 cup (160g) beetroot chutney
- 100g sliced lean leg ham
- 60g baby rocket leaves
- Lay a sheet of baking paper on a chopping board; top with bread slices. Spread slices with butter. Turn 4 slices so buttered side faces down; spread with cheese. Top with chutney, ham and rocket. Sandwich with remaining bread slices, buttered-side up.
- Preheat a sandwich press. Toast sandwiches, in batches, in hot sandwich press for 2 minutes or until golden and crisp.
Swap: Use fetta instead of goat’s cheese and caramelised onion instead of beetroot chutney.
