Pesto Fried Eggs & Avo on Toast

Crispy pesto-fried eggs, smashed avo, and a hit of chilli on Helga's Crafted Sourdough...a next-level breakfast that comes together in minutes.

  1. Toast the bread and smash the avo: Toast 2 slices of Helga's Crafted Sourdough, toasted to your liking. While it toasts, scoop avocado into a small bowl and season with salt and black pepper. Mash to your preferred texture.
  2. Fry the eggs in pesto: Heat a non-stick pan over medium heat. Add basil pesto and let it sizzle for 3 minutes. Crack in eggs and fry for 2–3 minutes until the whites are set and the edges are golden and lacy. Season with salt and black pepper.
  3. Assemble and serve: Spread the smashed avo generously over both slices of toast. Slide a pesto-fried egg onto each slice, then finish with  chilli flakes or chilli oil. Serve immediately.
