Pesto Chicken Toastie

Melty mozzarella, herby pesto, and juicy tomato make this toastie feel like a Caprese salad got a serious upgrade.
Ingredients
- Helga's Traditional White
- Chicken
- Mozzarella
- Tomato
- Butter
- Basil pesto
Method

Prep the bread: Lay out slices. Spread butteron the outside of each slice. On the inside of both slices, spread basil pesto generously.

Build the toastie: Layer cooked chicken breast, thinly sliced on one slice, then add tomato, thinly sliced. Season with salt and black pepper, then top with fresh mozzarella. Press the second slice on top, pesto side in and buttered side facing out.

Toast to golden perfection: Place in a cold non-stick frying pan and set to medium heat. Cook for 3m until deep golden underneath, then carefully flip and cook for another 2–3 minutes until golden and the mozzarella is fully melted.

Rest and slice: Transfer to a board and rest for 1 min. Slice and serve immediately.
